Granola

Approx. one baking pan

Ingredients:

  • 5 dl coarsely rolled gluten-free oats
  • 2 dl almonds (or other nuts)
  • 1 dl flaxseed
  • 1 dl sesame seeds or sunflower seeds
  • 1 dl coconut flakes
  • 3 large tablespoons honey (or maple syrup)
  • 3 large tablespoons of virgin coconut oil
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • ½ tsp Atlantic salt
  • 2 dl chopped dried fruit (e.g. dates and figs)

Procedure:

  1. Preheat the oven to 180° hot air.
  2. Mix oats, almonds, flax seeds, sesame seeds, coconut flakes, cinnamon, vanilla powder and salt in a large bowl.
  3. Melt the coconut oil with honey (or maple syrup) in a saucepan and then pour it over the other ingredients. Use your hands to mix everything together well.
  4. Spread the granola evenly on a baking sheet lined with baking paper.
  5. Bake for approximately 10-12 minutes. Turn the granola 2-3 times along the way so that it is evenly baked and golden.
  6. When the granola is ready, remove from the oven and mix in the chopped dried fruit once it has cooled slightly.
  7. Allow the granola to cool completely on the baking sheet and then store it in a tightly sealed container. It will keep for about 14 days - but it may be eaten sooner!
