Moroccan Orange Cake

1 cake in a springform pan approx. 24-26 cm

Ingredients :

  • 2 organic oranges (with thin peel)
  • 6 eggs
  • 225 g cane sugar
  • 300 g almond flour (maybe a little more depending on the size of the oranges)
  • 1 tsp baking powder
  • 1 tsp vanilla sugar or vanilla powder
  • Sprinkle icing sugar or icing for decoration

Here's how you do it:

  1. Boil the oranges (peeled) for 2 hours to make them completely tender. Let them cool, remove the seeds and blend them.
  2. Prepare the other ingredients: Mix almond flour with baking powder and vanilla sugar in a bowl.
  3. Whisk eggs and sugar together in a large bowl until light and fluffy.
  4. Add the blended orange pulp to the egg and sugar mixture and gently fold in the almond flour. The dough should have a light oatmeal consistency.
  5. Pour the batter into a greased springform pan and bake at 175° for about 50-60 minutes. If the top starts to get too dark, reduce the temperature to 160° for the last 20 minutes.
  6. Once cooled, decorate the cake with icing sugar or a glaze made with orange juice. You may want to use a little turmeric to give the icing a nice color.
  7. The cake can be decorated with edible flowers, candied violets or some blueberries for extra decoration.
