Ingredients:
- 400 g almond flour
- 200 g icing sugar
- 1 organic orange (peel)
- 1 organic lemon (zest)
- 1 organic lime (zest)
- 1 egg
- 2 egg whites
- 1 tsp cinnamon
- ½ tsp almond essence or 2 bitter almonds
- Garnish: approx. 100 g sugar
Procedure:
- Mix the almond flour, icing sugar and citrus peel (from orange, lemon and lime) in a bowl.
- In another bowl, whisk the eggs and egg whites with cinnamon and almond essence (or finely chopped bitter almonds).
- Mix the wet and dry ingredients together with a fork. The dough will be quite sticky. If it's too sticky, you can add a little more icing sugar.
- Use your hands to gather the dough and roll it into small balls, about the size of a small walnut.
- Roll the balls in sugar and place them on a baking sheet with baking paper. Press them slightly flat.
- Bake the macarons at 175° for about 15 minutes or until lightly browned.
