Pancake Puffs (Traditional Danish Puffs)

Approx. 28-30 pcs

Ingredients:

  • ½ liter of milk (or plant drink)
  • 1 tsp apple cider vinegar
  • 1 tbsp flea seed husk
  • 3 eggs, divided into whites and yolks
  • 2 tbsp cane sugar or coconut sugar
  • 1 tsp vanilla powder
  • ½ tsp salt
  • ½ tsp baking soda
  • Peel of 1 lemon
  • 125 g rice flour
  • 75 g corn flour
  • 75 g cornstarch
  • 50 g melted butter (or coconut oil)

Procedure:

  1. Add apple cider vinegar and flea seed shells to the milk and let it steep for about 10 minutes.
  2. Whisk the egg whites until stiff and set them aside.
  3. Whisk the milk with the egg yolks and the other ingredients.
  4. Gently fold the stiff egg whites into the dough.
  5. Bake the apple slices at a steady heat on an electric apple slice pan and turn them with a knitting needle.
  6. Serve with icing sugar and jam. You can fill the apple slices with a piece of apple or prune puree for extra flavor.
