Rough buns with Teff flour

Approx. 10-12 pcs.

Ingredients:

  • 9 dl water
  • 1 tsp apple cider vinegar
  • 10 g yeast
  • 35 g flea seed shells
  • 125 g teff flour
  • 100 g sorghum flour
  • 125 g millet flour
  • 100 g corn flour
  • 75 g mixed seeds and grains
  • 3 tsp sea salt
  • 1/2 tsp ground cardamom
  • 1 1/2 tbsp. coconut fiber flour

Procedure:

  1. Mix water, vinegar, yeast and flea seeds in a mixing bowl and allow the mixture to thicken slightly while you weigh out the other ingredients.
  2. Add the other ingredients and mix the dough well on a mixer for 10-15 minutes.
  3. Let the dough rise under a tea towel for 1.5-2 hours.
  4. Pour the dough out onto a table sprinkled with seeds and cut it into 10-12 pieces. Shape the balls and place them on a baking sheet.
  5. Bake the buns in a preheated oven at 200° C for about 38-40 minutes. Let them cool on a wire rack.
  6. If you want to bake bread, divide the dough in 2 and bake at 210° C for about 1 hour and 10 minutes.
